Anyone know how to make peanut brittle ??

Is it just a case of a swiss roll tin with melted butter and sugar poured over the top and then baked for a while and then cooled ?

or is it more complicated ?

I think it's toffee poured over peanuts and left to set...

G Ramseys Times recipe... Havent given it a try yet, but here goes...

300g mixed pecans/almonds/hazelnuts
450g granulated sugar
200ml water

Preheat oven to 200 degrees
Toast nuts until golden
Heat sugar and water in saucepan until dissolved and then boil without stirring for about 8 mins, swirling pan to achieve an even caramel
Remove from heat and stir in nuts
Pour on a lined baking sheet and leave to cool and harden
Break into pieces once cold and hard

yum...I used to make toffee all the time as a girl - toffee apples too and once or twice honeycomb toffee which was fab !
