DH is away at least one night a week, and I need some new ideas for me - vaguely nutritious as I am 24 wks and hungry, but getting bored of pasta. I need meals that feel like a bit of a treat at the end of a hard day with DD (3 yrs), I don't mind cooking from scratch, but obviously don't want to spend too long on it!

I'm a big fan of a tricolore salad:

  • avocado
  • tomato
  • nice mozza

And then a dressing made of good olive oil, balsamic vinegar and balsamic must (if you can find any, it really helps).

Nigel Slater's Real Fast Food is my favourite ever cookbook. Really recommend it.

My favourite lone meals are:

*asparagus baked with a drop of olive oil and a drop of balsamic vinegar, served with lovely bread and shaved parmesan

  • a big bowl of Greek salad with pitta bread
  • marmalade on toast (when I'm feeling really lazy)
  • a roast pepper stuffed with cous cous, served with salad

Followed by chocolate.

I hate cooking for just me! When dh used to be away a lot, I'd freeze individual portions of casseroles, bolognese, chilli etc. Baked potato would be my other staple for one!

I like to make a big old omelette with fried baby new potatoes and anything else I have got hanging around in the fridge bunged in it. Yummy!

also delia wrote a handy book before the days of tin meat telly called, 'one is fun', and i used that quite a bit as a singleton many, many years ago...

Rice mixed with broccoli and a can of refried beans (discovery ones are yum espesh if you like it spicy!)

Rice mixed with can of chickpeas and sprinkle of olive oil, garlic powder, and salt.

Grill some veggie sausages and serve with steamed veggies and steamed potatoes or oven chips (low fat kind can't be too bad)

Teriyaki salmon + soba noddles & steamed Asian greens

Cheats pizza
Pitta bread toasted & split in 2. Spread with Doritos or Pringles tomato salsa, sprinkle with grated cheese (low fat if you like) any topping you've got in & pop under grill til cheese is melted
