@TruthThatsHardAsSteel do you have recipe for Delia Smith one? I used to make it and no longer have her books.

I'll look for you tomorrow or Sunday. It had rhubarb compote with it. It read perfect every time

I did have a jolly good baked burnt basque one last weekend, bit I prefer non baked.

My go to recipe was once a Sainsbury's recipe card in the early '90s, and is basically a packet of ginger nuts or digestives for the base, then mix a tub of mascarpone and a tub of ricotta with juice of 3 limes and a little icing sugar to taste. You can do it with other citrus fruits instead. You could use cherries or blackcurrants.

Basically, a good cheesecake has a crunchy base, for texture, then the creamy cheesecake bit, them some acidic fruit to cut through the sweetness and creaminess. No faffing about witb white chocolate or nonsense like thst.

Unbaked.

My very favourite is a digestive biscuit base, lemon mouse type of cheesecake topped with homemade orange jelly. Pfaff to make but well worth it, sometimes we have it as an alternative pud at Christmas as it’s citrusy and the sharpness counteracts the richnes.

Thank you all for the wonderful recipes. I like baked best but made a white chocolate and passionfruit unbaked one recently which was nice but very sweet, I wouldn’t make it again.

@coffeetostart apologies I've had those bits of paper like 15 years 😂. I always made a base from digestives. It worked for me every time. Just follow to a t.

Basque cheesecake! So decadent and delicious.

I’m going to do a baked lemon basque cheesecake for Christmas.
Maybe a morello cherry one?
