Baked cheesecake vs no-bake cheesecake

I much prefer baked. I don’t like crushed biscuit bases, and I find the texture of unbaked cheesecake kind of claggy and depressing.

Patienceinshortsupply · 29/10/2024 21:42

I'm not a fan of baked, they're too heavy and claggy.

We do a white chocolate and raspberry one for Christmas most years, or the banoffee one from Janes Patisserie.

LegoTherapy · 29/10/2024 21:43

Unbaked because I don't like using eggs in things if I can help it. I make an Oreo one, a biscoff one, mini egg one, ginger and lemon, chocolate

RollerSkateLikePeggy · 29/10/2024 21:45

Unbaked. Love the Mary Berry lemon and ginger and it's quick and simple to make. The Jane's Patisserie Crunchie one is pretty good but very sweet!

Cerialkiller · 29/10/2024 21:48

50/50 if I'm making it myself but whenever I'm disappointed by a cheesecake it's an unbaked one so would only ever buy baked.

I think I consider them rather different desserts so possibly unfair to compare.

My best ever was a baked biscoff cheesecake from center parks supermarket. Stunning!

I also enjoy a plain vanilla new York style baked cheesecake.

Any chocolate on any cheesecake is wrong, it's already so rich that the addition of chocolate is too much. Caramel however is lush. As is any fruit. Lemon has to be really tart though or it's awful.

TianasBayou · 29/10/2024 21:49

Any! But it's like comparing apples with oranges.

Plain New York cheesecake with sour cream topping (baked) is my favourite.

But Jane's Patisserie Baileys cheesecake (unbaked) is also delicious.

Excellent thread. @StiffyByngsDogBartholomew any chance of that recipe?

jigglywigglyhungryhippo · 29/10/2024 21:53

Unbaked lime or lemon.

Namaqua · 29/10/2024 21:56

Any. Just give me the cheesecake

Selford · 29/10/2024 21:57

@StiffyByngsDogBartholomew would you mind sharing the recipe? I like the sound of a lighter cheesecake

StiffyByngsDogBartholomew · 29/10/2024 21:58

I'll dig it out tomorrow, you deffo won't find anything similar on thr internet, I've looked before !
basically it's cottage cheese, lemon juice and rind mixed with egg yolk and gelatine, lightly whipped whipping cream (double has too high fat content and is too dense for this pudding) all folded together then finally you fold in egg white and sugar whisked to a meringue. Pour over a base made of Demerara sugar (it has to be Demerara for the crunch), digestives and melted butter.
i top it woth raspberries and serve with raspberry coulis.

felissamy · 29/10/2024 22:08

Baked is sublime. Unbaked is nice enough but not cuisine.

Xyz1234567 · 29/10/2024 22:14

Love unbaked with something fruity and zingy to cut through the richness. Lemon or white chocolate and raspberry are my favorites.
I really dislike everything about baked cheesecake despite giving it my best attempts. It's just claggy, thick, too rich and fatty and boring. Nah.

gano · 29/10/2024 22:14

Unbaked. I wouldn't touch a baked cheese due to the texture. As someone else mentioned, it's very claggy. My favourite cheesecake is bourbon biscuit base, with a vanilla mascarpone cheese filling, and cherry topping.

Sounds very interesting, although controversial because everyone knows bourbon biscuits are the worst kind of biscuit and the work of the devil. I think I would enjoy pulverizing them!

amispeakingintongues · 29/10/2024 22:20

I love all cheesecake.

CatherinedeBourgh · 29/10/2024 22:21

Felicity cloake's perfect basque cheesecake.

steppingout · 29/10/2024 22:46

Basque! My absolute favourite, served with roasted fruit (quince is good). The Guardian has a 'best basque cheesecake' recipe, it's super easy.

Littleguggi · 29/10/2024 22:50

I've never tried a basque cheesecake, in fact never heard of it since this thread! Seems i will have to try it!

Baked, with lemon zest and vanilla.

I don't like bourbons either, so destroying them is very satisfying! They do work as a cheesecake base though.

nocoolnamesleft · 30/10/2024 00:23

Much prefer the texture of an unbaked. As other have said, much less claggy.

ouch321 · 30/10/2024 00:26

Baked obviously.

Unbaked is a bit like making a Victoria sponge from a packet mix.
