I tend to buy baked. That is rare though. I am more likely to make it. I mostly make a whiskey or Baileys one and serve with fruit and a scoop of homemade vanilla ice-cream

Unbaked reminds me of packets of Birds Eye Trifle from the 70s - I think it’s the gelatine that puts me off.

I prefer baked because generally lighter as filling content is egg, dairy and sugar/flavours rather than just dairy and sugar.

I like both but baked is far superior to unbaked. Another fan of basque here, so simple but so delicious. This is the recipe I use:

Baked. A wonderful, Polish cheesecake with a cracked, brown top. Can be on a biscuit or pastry bake, but raisins can get in the bin. Nothing should get in the way of that lovely, dense, sweet, slightly lemony cheesecake.

Second best is the simple cream cheese-sugar-lemon juice-vanilla mixture on a biscuit base. Light and simple and gorgeous.

New York cheesecake, the sort set with gelatine, utterly yuck. It can get in the bin with the raisins. I'd eat baked cheesecake with raisins before I'd even touch cheesecake set with gelatine.

Entirely with you on the raisins and gelatin. This is absolutely a hill I will die on.

All the others always taste like a packet of digestives biscuits (or ginger nuts) whizzed up in a food processor with a packet of Philadelphia on top (with lemon curd etc added). I'd rather just have the Philly on the biscuit.

The mistake is using Philly. It has a wrong, slimy texture and a wrong flavour for cheese cake. The only place for Philly is in a sandwich. Supermarket own-brand, full-fat cream cheese with the whey poured off makes the best no-bake cheese cake.

50/50 If making myself, I love the carnation cheesecake recipes, philipelphia cheese and lemon give it a real rich zing. Some unbaked cheesecakes can just taste like whipped cream.

In the 70-80s when cheesecakes were vogue, mum used to buy the cream cheese by the pound from the deli counter.

My MIL likes the Philadelphia, two spoons of lemon curd and a packet of digestives type.

I'm all about mascarpone and ricotta type (probably 10x the calories) without the biscuits... 😀

Baked, you have to hunt down cream cheese that has no additives.

White chocolate cheesecake
Make a base using ½ a packet of malted milk biscuits and ½ a packet of hobnobs with 100g of unsalted butter. Melt butter add smashed biscuits, press into 10 inch tin.
Mix a carton double cream with two tubs full fat cream cheese, 4 eggs, 3tbls sugar, 1tbls custard powder and a good splash of Galliano stir in 2 big bars melted white chocolate (400g total, Aldi does one that melts nicely). Put in cold oven and bake for 1 hour at gas mk 2½, leave to cool in oven with door shut. Chill well

Fool proof recipe

Biscuits of choice smashed to crumbs with a rolling pin, mixed with melted butter and pressed into a springform pan (mine is 10 inch) I like ginger nuts myself my digestives work. Refrigerate whilst you prepare the batter.

11b cream cheese beaten until smooth with 8oz sugar, add 4 beaten eggs.

Add flavour of choice, I like juice and zest of a lemon plus 1 tbsp lemon extract or limoncello instead of the juice Grin and a punnet of fresh raspberries, mix, put in prepared tin and bake 45-50 mins at 170 c, gas mark 3 until it begins to colour on very outside but wobbles in middle.

Whilst baking add 2oz sugar to pot of sour cream and flavour of choice eg raspberry liqueur works great with above

Put mixture onto cheesecake and bake 5-10 minutes until topping in set.

Recipe is from an American and you can change flavours easily. Also to make vegan use silken tofu and corn starch to stabilise!

I've just made an unbaked one, it's a shortbread biscuit base with lemon flavour cream cheese/ double cream. Hope it sets!
