Baked potato fillings.

I have recently discovered that my children will eat baked potatoes. I mean one big potato with a filling in it a la "Spud U Like", not a baked potato as an accompaniment to other food. However, dh is a bit grumpy about the idea because it is "not a proper meal"

So far, I have only given them the option of 2 fillings: baked beans and cheese (adding butter beans to this mix did NOT go down well) or tuna and sweetcorn mayonnaise.

Please could you suggest other fillings that can be made quickly and easily. I mean to pursue this easy and healthy meal option, dh notwithstanding, and I need more variety.

Chilli con carne is good. Or my children loved twice baked potatoes

My ds has had jacket potatoes for his school meal option quite a lot. They have chilli, bolgnese, chicken in white sauce, turkey casserole - pretty much anything!

I make baked potatoes called "Glam's Boats" Cut a baked potato in half, scoop out the middle, mix with whtaever you think your DC will like, top with cheese, pop under the grill or back in the oven. Finally if I'm feeling all Annabel Karmel I stick a little sail in each half.

I love baked potatoes, in fact as a student and pre-DP they were my staple diet . DP however always complains that "its not a proper meal" too.

My DC like them with the usual fillings you mention but also cheese and coleslaw or ratatouille with grated cheese melted on top

Sainsbury's veg chilli (in a tin!) is lovely with grated cheese over and/or a dollop of creme fraiche/guacamole. A very filling meal. Also chicken curry with thick plain yoghurt.

Tuna mayo with cheese is nice, also ratatouille, something my mum used to make (a bit like Glams boats but called 'potato tubs') was to scoop out the middle, mash, mix with cooked crumbled bacon and cheese and then back under the grill.

My dad used to put gorgeous creamed mushrooms in baked potatoes, really peppery with loads of parsley. He was a chef and sadly passed on, I wish I had his recipes!

Whizz up some cashews/peanuts/bombay mix / whatever like breadcrumbs and mix into a bit of Philadelphia, grated cheese, grated carrot, dash of Lea & Perrins. Yummy on jackets, toast, in sandwiches or as a dip so make up a bowl, clingfilm and store in the fridge.
