Anyone got a nice easy recipe please ..

I've looked online and there seems to be a lot of fecking about with bain marie's and zabaglione..

Will it work if I just bung the mascarpone, egg yolks, sugar and a bit of double cream in a bowl and mix it up ?

I want the recipe of the Tiramigu one - find the normal one sloppy and upappetising but the yummy little pots that only come in twos (bastards) are sooo yummy - it is not soggy and has ganache on top - oooohhhh!

If I remember correctly, the trick is to not over coffee it or over alcohol it! I used to be in charge of the spongey fingery in coffee bit when we had the restaurant......

I will ring MR C now and see if he is up for sharing it.....

.....it is sooooo divine.......

Will a tiramisu ice-cream recipe suffice??

collision · 24/04/2008 18:59

500g mascarpone
4 egg yolks
2 egg whites
50g caster sugar
2 tbsp rum, marsala wine or tia maria
750ml instant coffee (cooled) tho espresso would be even better
sponge fingers or savoiardi biscuits

  • Using a whisk beat the egg yolks with the sugar til light and fluffy.
  • Whisk in the mascarpone 1/3 at a time and add the liquor.
  • Beat the egg whites to a hard peak
  • Fold the egg whites into the mixture using a large spoon.
  • Dip the biscuits into the coffee for a few seconds and layer in a deep dish (2 layers of biscuits required)
  • Pour the tiramisu mixture over the biscuits and place in fridge covered with cling film til needed. Dust with cocoa powder before serving.

NB It is easy to oversoak the biscuits so do try not too as the base will be too soggy.

It is easier to beat 4 eggwhites and just use half the mixture (apparantly!!)

So, there you go Ladies.....Chef Luca's Tiramisu Recipe......tis sooooooo yummy!!

Thank you so much Chef Luca's missus My guests will be impressed (providing I don't scoff it all whilst making it of course )
