Inspired by a thread else where. I’m going to make some soup but I think I need some with protein in other wise I want bread with it.

What are your favourite flavours and/or recipes?

I once had cauliflower cheese soup and it was delicious.

NamasteTheHellAway · 29/09/2024 07:47

Harira (a veggie version with chickpeas, green lentils, and freekeh)
Carrot, apple, and lentil
Leek, potato, and white bean

Lentil & lemon from the original Covent Garden recipe book - good for protein and v easy and delicious, doesn't even need blending! I first made it at uni and still make it regularly now, 20 years later.

As a pp said, cauliflower cheese soup (with mustard) is another good one.

My ex MIL made a butternut squash and ginger soup. It was delicious.

I also once had a white onion soup. Ex ordered at a pub (even though if I'd known what it was I wouldn't have ordered as I'm not a fan of onions.) OMG best soup ever. (I even commented on it to the staff and I never really do that). Sadly, they never had it on the menu again.

Chicken noodle soup is the ultimate comfort food. I also love broccoli and Stilton.

I use this recipe, but I never have tinned tomatoes with garlic in the cupboard, so instead I just use plain tomatoes and add two cloves of garlic when cooking the onions. I also use 1tsp cumin (instead of 2), but add 1tsp ras el hanout and 1tsp harissa paste as well. I also use chicken stock instead of vegetable stock, and substitute the broad beans for an extra tin of chickpeas. I blitz it a bit before I add the second tin of chickpeas, to make it thicker (but I don't completely blend it because it's nice to have some texture/chunky bits).

It's also really nice with a cooked chicken breast or some leftover chicken shredded up and mixed in, but I only do that if I have some around. It freezes really well too.

Thai-style squash. Very simple. Chop up, de-seed, roast and de-skin some squash, cook 15 mins in a pan with coconut milk, garlic and Thai red curry paste and blitz in blender.

Pea and bacon. Best soup ever (even better if you use stock left over from cooking a gammon).

I had aubergine soup in a restaurant in Glasgow as part of a set lunch menu. No idea what made me choose it other than I felt I needed some veg inside me. Was not holding out much hope but OMG it was delicious! No idea how it was made but I could detect chilli, garlic and parsley, It was an Italian restaurant.

RaraRachael · 29/09/2024 13:31

I make one with potatoes, sweetcorn and chipotle paste - lovely
Also one with potatoes, bacon and onion with cream - also lovely

Soluckyinlove · 29/09/2024 13:40

I make a few different soups but my favourite at the moment is curried sweet potato soup. The recipe originally was for butternut squash but one day I fancied it and didn't have any squash. I substituted sweet potato and found I preferred it.

I do vary it a bit and like a good sprinkle of grated parmesan in it.

I have just made a bastardised minestrone. I add red lentils to make it more filling and proteiny and it also has cannelloni beans and some chilli flakes for kick

TomatoSandwiches · 29/09/2024 13:47

I love a well made onion soup, French or otherwise.

Tortellini soup, lamb or beef with barley, lentil & bacon, garlic soup, brocoli & stilton....

Bloody love a good soup thread but makes me hungry 😂

TomatoSandwiches · 29/09/2024 13:48

I've a much loved seafood chowder recipe I found online years ago. Its my quick freezer meal as apart from the cream I usually have all the ingredients in the pantry or freezer.

Finely dice a shallot and fry in a little butter. Add in chopped chorizo and sizzle for a few mins then stir in a tablespoon of flour. Then add in 600ml fish stock and 100g diced raw potato.
Leave this to simmer until the potato is mostly cooked. Add in your seafood mix, I usually use the packet from lidl with a fist full of frozen jumbo prawns. Also add in 300ml milk and some smoked paprika and a pinch of nutmeg, turning the heat down to a very gentle simmer until the fis is cooked. Add a few tablespoon of cream and serve with bread of choice and a sprinkle of black pepper and parsely.
