Using up eggs.... family tea recipes pls

Got tons of eggs. What can I make for tea that isn't omelette/quiche or plain old fried/scrambled/boiled? Thanks

How about egg custard tarts, or birds nests( jacket spuds, hollowed out with egg baked in middle of each half)

Oven-baked eggs are gorgeous. Put each egg (shelled) in a buttered ramekin and stand them in a roasting tin with about an inch of water. About 10-15 mins on high does the trick, longer if you like them less runny.

Cakes, obviously. Three in a big victoria sandwich or for a big batch of fairy cakes.

Thanks Mrs Mattie - love the sound of the Shashuka. Egg fried rice and pancakes are lovely, but don't use up enough eggs! (DH and I both bought a dozen at the weekend!)
Just remembered something a vegetarian friend made when we were student- halved boiled eggs, covered in cheese sauce, topped with cooked leeks and mashed potato. But really fancy the Shashuka. Will try it. Thanks all.

Shashuka is lovely. Don't have to be too worried about the exact ingredients, either. It's basically eggs baked in a spicy tomato-based sauce. They serve it with warm flatbreads in my local Israeli cafe. Very nice.
