What's your favourite recipe using fresh coriander

Our neighbours have gone on a long holiday and amongst other things have left us a pot of coriander. One of my DC didn't like it so I got out of the habit of using it and DH isn't overly keen but with a tasty dish am sure could be won over.
I can obviously Google but I'd prefer recipes that others have really enjoyed. Thank you.

Guacamole. Not a dish as such but avocado, loads of coriander, lime and salt. Tomatoes, onions. Can serve with fajitas or tacos and sprinkle more coriander on top!

Salsa. It's an easy to make and once you do your own the jar stuff is rank.

Finely chop red onion, coriander and salad tomatoes (take seeds out if you can be arsed it's worth a few extra minutes to do) and also chopped fresh chilli.

Mix in a bowl with a little salt and some lime juice.

Fresh, lovely and very tasty

I make a hot dip, which is onions, chilli, tomato, mint, coriander, mayo and salt. So 1 small onion, one medium tomato, one small or half a chili, about 5 or 6 mint leaves, a handful of coriander and a large pinch of salt. Whizz down in a blender. Add a spoonful of mayo to just thicken it up.

Can be kept in the fridge for a good few days. Wonderful with potatoes, or in a cheese toaste. Or with nachos.

But I use it in home made curries mostly.

I havechicken thighs in the freezer, this would be perfect with them, that's one meal this week sorted thank you.

I've enjoyed chopped fresh tomatoes, red pepper, red onion and coriander as a salad. Mango, passion fruit, red onion, lime juice and coriander as a salsa. You can freeze it but it's only good to add to cooked dishes.

For some people coriander tastes like soap. No amount of finding the right recipe will change that. It is thought to be genetic. I love it but even a leaf wafted in the vicinity of food renders it inedible to the rest of my family.

I love coriander and add it to curries, tagines etc. but my favourite is using it with mint whether that is in Thai mince lettuce cups or in summer rolls. They just work beautifully together and taste so fresh.

Chop chicken breast or meat of choice
fry off
make a sauce with ginger, garlic, honey, lime and kejap manis
add sauce to chicken and reduce
serve with rice, grated raw carrot, chopped peanuts and loads of coriander.

Those posting Good Food recipes - thank you, but I can't read them as behind paywall. Are you really paying £24,99 a year? I think that's a bit pricey for one recipe source.

I only discovered this recently when DD (19) said she hated coriander because it makes everything taste soapy. I thought she was just being her usual (immensely picky about food) self, but she told me to look it up, so now I understand it is a genetic issue....which is weird because no-one else in the family has an issue. However I have stopped using it when she is home from uni!

I use lots in beef keema or a pork Thai green curry that I make. Also guacamole as others have suggested.

@OMGitsnotgood if it’s my links behind the paywall- sorry! I am on a free trial so basically ripping all of the exclusive recipes before I cancel. But the recipes I posted are on the free part of the BBC Good Food site so can be searched for if my links are dud ones.

Tastes like soap to me, too. The flavour is distinct, even in very spicy dishes.
