What's your favourite recipe using fresh coriander

Our neighbours have gone on a long holiday and amongst other things have left us a pot of coriander. One of my DC didn't like it so I got out of the habit of using it and DH isn't overly keen but with a tasty dish am sure could be won over.
I can obviously Google but I'd prefer recipes that others have really enjoyed. Thank you.

Madhur Jaffrey's Kenyan Coriander Chicken is one of my favourite curries - I leave out most/all of the chillies for the kids and its's still great. Amazingly it has no dried spices at all!

This is a particularly useful recipe to have up your sleeve if you have a lot of coriander you need to use up quickly, as it takes 100g at a time.

  • Can of chickpeas
  • squeeze of half or a whole lemon (depending on your taste
  • 1 or 2 crushed cloves of garlic (raw)
  • lots of chopped corriander
  • lots of chopped parsley

mix all together in a bowl and season with salt and pepper as a side salad or as a topping in a sweet potato.

This one (another by Ottolenghi) is very good, also meatless, and benefits greatly from a handful of coriander on top before serving. You can always leave it out for those who don't like it.

For some people coriander tastes like soap. No amount of finding the right recipe will change that. It is thought to be genetic. I love it but even a leaf wafted in the vicinity of food renders it inedible to the rest of my family.

I love it but dh finds it soapy. I tend to chop it up and sprinkle it on salad, I eat a lot of it.

Exactly. Just like no amount of fiddling will make me love bell peppers; they upset my stomach for hours after eating.

Kidney bean dip - looks sludgy thanks to combination of red kidney beans and loads of coriander, but tastes amazing, I promise!

Drained tin of kidney beans
zest and juice of a lime
big handful of roughly chopped coriander, stalks and all
salt
small fresh chilli pepper
garlic (to taste)

Whizz it up until smooth. Delicious with tortilla chips, on nachos, as a side with salad stuff. Think of it as Mexican style hummus. Zesty, high protein, full of flavour and easy. What’s not to love?

I thought she was just being her usual (immensely picky about food) self, but she told me to look it up, so now I understand it is a genetic issue....which is weird because no-one else in the family has an issue. However I have stopped using it when she is home from uni!

I use lots in beef keema or a pork Thai green curry that I make. Also guacamole as others have suggested.

Yes, it is genetic but the trait is incompletely penetrant (meaning, not everyone who has the gene variant will actually perceive it is soapy). I do happen to have the variant and cilantro does not taste soapy to me - very grateful for that.

Blend it (including the stalks) with onions, spring onions, garlic, peppers, chilli, parsley, ginger, thyme, celery, salt, lime juice and a splash of vinegar/oil.

Use it as a marinade for meat/fish or roast veg, add extra fresh for serving,turn it into a sauce, add some to stews and curries towards the end of cooking, add some allspice/fresh bay/chives/the last of a bag of spinach or salad leaves/lettuce/etc.

Depending upon how much vinegar and lime juice you use, it keeps in a jar in the fridge or you can freeze it flat in a plastic bag pressed into portion sizes with the back of a knife or a chopstick before it goes in.

You can get to see a list of recipes but the recipes themselves are app only and therefore chargeable. I know there's a cheaper trial option, but on principle am not going to sign up.
They are taking the easy option of charging users rather than putting the effort into advertising. And charging way more than is necessary I think

I think that Good Food have recently changed the model - I get the magazine, and sometimes the recipes in the most recent edition are paywalled, but it seems you now have to sign up to a free account, even to access the recipes that have been there for ages. Irritating, but not the end of the world I guess.

Also OP when making fajitas cook way more of the veg than you think you will need then any left overs are amazing in a salad the next day.

Were having fajitas in a short while ago- such a crowd pleasing dinner Grin

DD now though refuses shop bought salsa as home made is such a game changer
