What's your favourite recipe using fresh coriander

Our neighbours have gone on a long holiday and amongst other things have left us a pot of coriander. One of my DC didn't like it so I got out of the habit of using it and DH isn't overly keen but with a tasty dish am sure could be won over.
I can obviously Google but I'd prefer recipes that others have really enjoyed. Thank you.

I think that Good Food have recently changed the model - I get the magazine, and sometimes the recipes in the most recent edition are paywalled, but it seems you now have to sign up to a free account, even to access the recipes that have been there for ages. Irritating, but not the end of the world I guess.

Ah ok will take a closer look. I don't mind signing up but it looked like you were signing up to a trial then £24.99 a year after that

Don't sign up to a food magazine subscription!

Go onto you tube, there are a gazillion people on there sharing their recipes.

I have had a BBC account for many years. When my adult DD was a child she used to watch a TV show on CBBC called Roar. They was an acompanying website with activities on, so I signed in for that. Maybe this is why I can access the recipes?

Shred some red cabbage, white onion and carrot. Add a big handful of roughly chopped coriander. Swig of olive oil and a swig of red wine vinegar, with a bit of seasoning.

Sort of like a slaw but no mayo

I make a stew where I chop up 2 aubergines and a butternut squash, tods in olive oil and roast till caramelised, meanwhile finely slice 2 red onions and add 2 tins chopped tomatoes and 2 tins black beans, salt and pepper and a tablespoon of Ras Al Hanout - then add an enormous amount of chopped coriander.

Salsa. It's an easy to make and once you do your own the jar stuff is rank.

Finely chop red onion, coriander and salad tomatoes (take seeds out if you can be arsed it's worth a few extra minutes to do) and also chopped fresh chilli.

Mix in a bowl with a little salt and some lime juice.

Fresh, lovely and very tasty

If you have lots of coriander then you absolutely need to try making zhoug.

It's basically whizzed up coriander, chilli, garlic, cardamom, spices in lemon juice and olive oil, and it tastes absolutely divine!
