I assume they expect you to use apple sauce from a jar.

I'd stew some apple with a bit of sugar instead, if that's the case - particularly if it's for a vegan, as bottled apple sauce often contains butter.

apple sauce often used to replace eggs or butter in vegan cakes.. would stew apple but not add sugar just to make sure cake does not become too sweet!
