HELP! There is no self raising flour here! How much baking powder for cupcakes??! BANANA LOAF RECIPE PLEASE!

I want to bake a batch of cupcakes, but self raising flour does not exist in this country. What do I do?

I am using dizzydixes lovely recipe, but it is with self raising flour.

125g sunflower spread
125 caster sugar
2 medium eggs, beaten
125g pot fruit flavoured yogurt
100g self raising flour

Any ideas??

I have also left my banana loaf recipe in my main moving boxes, so dont have it with me.
I cant find the website I got it from originally, but it was the best banana loaf in the world. Do you have a recipe to share (preferably without self raising flour, lol)

I would use a teaspoon of baking powder for 100g plain flour.
I use the same recipe for banana muffins as for banana loaf, I can dig it out if you like? I uses plain flour, with baking powder and bicarb as well.

Thanks, I used 1 1/4 baking powder for 125g flour. It seems to have worked, they turned out beautifully. Orange/lemon cupcakes and chocolate chip cupcakes!

The banana loaf I normally do uses 3 bananas, 3 eggs, flour sugar and butter, I just cant remember what else and in what proportion!

If you do have it handy, it would be brilliant! I am baking for my dads 81st birthday and my sons 6th (they share birthday). My mum will make a more festive big cake, so we are covered!

Sorry QS - i've got the dc off on hols this week so can only get on the computer for about 10 minutes a day!

Anyway, my banana muffin recipe for banana loaf:

280 g pl flour
1 teasp baking powder
1 teasp bicarb
3 ripe bananas
110g sugar
1 egg
85 g butter melted or 90 ml corn oil
60 ml milk or water

basically mix dry ingreds. Mash bananas and mix with wet ingreds. Mix together (I sometimes put in choc chips or nuts too) and bung in a tin (or muffin cases lol)

Bake at 190 for 20-25 mins for muffins, longer I suppose for a loaf.

I must try the cupcakes recipe - it sounds lovely. Can you use any flavour yog?
