Today I was in a cafe(eating cake while my daughter played tennis!) and I had this cake which I always have if I see it. I would love to be able to make it myself but I don't know what it is called.
Its sweet shortcrust pastry then red jam topped with a layer of moist, dessiccated coconut cakey stuff. I think its what you call a traybake.
Does anyone know what its called? Even better, do you have a receipe?
