exotic bean mix ideas please

I have a bag of exotic dried bean mix which says on it soak overnight then use for spicy casseroles. I bought it when I decided we should become healthier (ages ago and it's still in the larder) Does anyone have a recipe which is yummy that they would like to share?

Jalhapeno peppers (Discovery do a range) about 2 - 3 tea spoons for 4 people. these are lovely and so much better than dreid chilli because they have as sweetness to them

Fry these in olive oil with 3 sticks of celery

Add the beans, one/two tin of tomatoes,a tin of sweetcorn a little stock and boil/simmer for about 40 mins

Don't add to much stock/water as it needs to end up fairly thick - you can always add more 'juice' as you go along

Serve with rice, in a bowl with a side salad or roll up in fajhitas (SP!) with grated cheese and any other dips

It's gorgeous - i always get people asking me for this recipe and its so cheap, easy and healthy. I usually used canned beans though but i'm sure dried will do the job

The key to this recipe is def the jahepino peppers
