Need help planning meal for weekend please!

I'm sure this has been done many times before, have had a search, couldn't find answers, so:

Need to cook a dinner for four on Saturday night - good friends coming around and I haven't cooked for guests since dd was born!. Not exactly 'dinner party' - but I don't want to make spaghetti bolognaise if you see what I mean.

What shall I do? Friend is pg, so the usual pg no-no's apply, and they don't like fish/seafood, and not particularly keen on v. spicy food.

Can anyone suggest 'sure-fire' recipes? I was bought the new(ish) James Martin recipe book, and trialled the meal I was planning but it went hopelessly wrong, so now I am in panic mode. Thank you very much for your suggestions!

A nice roast? make some roast veggies so everything is cooked in the oven, nice and easy.

I find this easy...
4 chicken breasts - slice them open so you can stuff some mozzarella or goats cheese inside, season, sprinkle with dried chillies for those not worried about the spice. Close them up, wrap couple of slices of parma ham around them to seal them tight - this can be done earlier in the day and then leave them in the fridge.
Cook in oven when ready for about 25/30 mins at 170/180ish and serve with veg.

Crumble is nice and (I think) even nicer warm or cold so can be done well in advance.
Rhubarb fool also delicious but v simple.
