madeira cake - can I freeze it?

ok so I plan to make madeira cake for ds' birhtday cake. Will it freeze ok so that I can do it a week ahead? If not, how long will it stay fresh for in a tin? And, if I freeze it should I cut it into the train carriage pieces pre or post freezing? Oh and would you freeze it in its baking tin or take it out?

yes..freeze it
take it out of the tin and wrap it in foil
it will freeze and defrost quicker if you slice it first
depends how much time you have to defrost it later

thanks for reply. Good so relieved I can freeze as I want time to make naother one if I bodge it. Will cut it into carriages first then and then I'm all ready to go the day before to ice it. Won't fit back in a tin after it's decorated so do you reckon it'll stay fresh enough if I just clingfilm it overnight after icing??

Once it has been iced it should be fine for a day or two. Are you using butter cream icing or fondant? either way you should be ok

I am doing the same, I have cake in the freezer for a christening on saturday. I plan to defrost and ice it on friday

you can take it out, ice it, then defrost in fridge already iced

Yes, it should be, but you won't be able to put the doll in with it frozen (unless you use a power drill). Madeira cake will keep for up to a week without freezing anyway. In fact, it is always better the day after baking IMHO.
