Leftover coriander - any ideas?

Made carrot and coriander soup today but have quite a lot of fresh coriander leftover. Would be a shame to waste!

I don't really want to make anything with 100's of ingredients like a complicated curry - does anyone have any simple but lovely ideas I could use. Would it go with say salmon and if so how would I go about this?

coriander pesto is lovely but no idea how to make it!

I'd put it in a freezer bag and freeze. When you need it you can just crumble it in the bag and add to whatever you make.

I'll go with the freezing too if you don't want to use it.
I do this with all my fresh herbs, it tastes no different
