making chicken stock

am I right in thinking you just boil the carcass for a few hours with onions and carrots, skim the scum and then strain to make stock? this is the first time I'm going to attempt to make stock instead of just chucking everything out so all advice and tips welcome!

Yep,that's al lthere is to it.I only simmmer for about 40 mins though.

I usually boil the carcass for about 20 minutes and then skim off any scum. Then I add an onion, celery, and some root vegetables and peppercorns. I let this boil for about an hour. At that point, I remove the solids, and then evaporate as much water as I need to to fit it into a couple of jars.

When I use the stock, I may have to add water if it is too strong.

thanks laydeez! I can't believe I've become a domestic goddess since DS was born - I never thought i'd care about the quality of stock i put in his little tummy!
