I also use mashed potato blended with salmon or any white fish, a little fresh chilli, some fresh herbs (I use chives & tiny bit of dill) and lemon. Form into small discs, coat in seasoned flour and fry. Serve with lemon wedges & dip (mayo, aioli, chilli sauce etc etc)
