I can do the pie & mash, how do I make the liquor?

Missing my old London pie and mash shop and having cravings. Anyone got a good recipe for making the liquor to go with it, never made it before but just not in the mood for bog standard gravy.

Just flour, parsley and water

Butter - 25g (1 oz)
Plain flour - 25g (1 oz)
Water - 300 ml (10 fl oz), or chicken stock
Fresh parsley - 4 tbsp, chopped
Salt and freshly ground pepper
Malt vinegar - 1 tsp, optional

Melt the butter in a saucepan. Add the flour and cook for 1 minute.
Gradually add the water or stock. Bring to the boil, stirring continuously.
Add the parsley and seasoning and vinegar if using.

Really? Thanks you two, I was sure there was more to it than that. Maybe my P&M shop just used a bit more vinegar as it really didn't just taste like parsley sauce despite my mum's insistence.

Right been at hospital this evening so no time for dinner today. Hopefully it'll make tomorrows menu.

Use chicken stock if you can, I think it makes a huge difference!
