What's your favourite trout recipe? Looking for ideas

We have some chunky trout fillets in the fridge and don't want to just grill it and eat it with spuds...although that does sound quite nice!

OK, cut up some dill very finely and mix with butter, cut up some smoked salmon in thin strips. Put the thin strips on the trout leaving gaps which you then 'fill' with the dill butter. Alternate one dill butter , one smoked salmon strip and cover the trout. Place in a greaseproof paper parcel and bake in the oven. Yummy!

Baked in foil in the oven with rosemary, lemon, capers, olive oil, white wine, salt and pepper. V quick too.

Put the trout fillets on foil with a little butter and pour on some fresh orange juice. Add some dill and orange slices if you have them, cover with the foil and bake in the oven. It's really easy and my kids like it - which is always a bonus!
My mother does one where you put the fish in an oven proof dish (greased with butter) add some orange juice and put chopped hazlenuts on top before baking in the oven. It's tasty too but has a drier texture than when you cover it with foil.

Filets are good fried - wrap a slice of parma ham around each filet, with a slab of butter and a fresh sage leaf. (Use a toothpick to hold it all in place.) Comes up lovely. Not very healthy, though.

These ideas all sound lovely! DH is taken with the chilli salsa and noodles at the moment and as it's him what'll be cooking it, that may be what happens!

But we'll definitely give some more of these a go - we're getting more 'interesting' in the cooking room these days
