I had Lindsey Bareham's "Just One Pot" and it is excellent. Use it a couple of times a week and every recipe has been a success. These are just a few of the goodies - After-work coq au vin, Boston bean soup with watercress, Pork tenderloin with beer, Lamb and barley broth, Smoked chili con carne with cherry tomatoes , Spag bol Florentine... Have got loads of cookbooks but this is just the sort of stuff that sees me through the week.

Ainsley Harriots Meals in Minutes. It's great, if you can stand the annoying commentary he does all the way through it

Hugh FW's meat one and 'Jamie's Dinners'. Still haven't had time to even open then.
Did you check out Dean&Delucca when you were in NY Thomcat? I sooooooo want to go there.

AuntyQuated - Uhmmmmm...the cassoulet, puff pastry pasties (can't remember the name he gave them) and haddock with egg (can't remember that one either). Dead easy and tasted pretty good too. I could remember them to do again without looking at the book which is the best thing.
