Help I have veggie foodies coming for dinner

well one of them is veggie
one eats fish
one doesn't eat lamb
the other eats anything

So I guess I could go for a combo starter eg antipasti type thing with some fish and some veggies

What can I do for main?
Not pasta pls

Or alternative starters welcome

Pref stuff than can mainly be prepared in advance?

Was thinking something mushroomy maybe?

Nigel Slater had really good chickpea-type vegan recipes in one of the weekend papers - I think it was the Observer. Looked very good.

Along with veggie lasagne I feel it is the thing they must be given most often at dinner!

Stuffed aubergine recepie in nigellas feast book is excellent and tres impressive-we are a household of veggies and its one I get out again and again

Also I have a vegan feast book which has pumpkin and walnut ravioli whihc is quite easy to make (if you hav the tim) and is tasty

Shame you don't like lemon grass as i would prob. do a sort of SE Asian buffet-loads of smabals, satay and a chilled gless noodle affair that veggie could get into-shredded veggies and strips of omelette with crused peanuts in sesame/soy/chillie/ginger/coriander dressing.

what you want is to serve a fabulous cheese board with good crackers and some quince paste

I would suggest a starter of large field mushrooms sauteed in butter and garlic and deglazed with marsarla and then sprinkled with breadcrumbs, lots and lots of parsley, more butter and parmesan and finished under the grill and served with a good chutney

and for main course ....... a pissaladiere, the short crisp flat pastry tart with spread with a reduction of stewed tomatoes and oninos and topped with olives and anchovies for the non veggies, an aioli with coriander and lime and a salad of roast squash, very well caramelised, and aubergines and a bit bit of chili.

Sorry but that strudel looks minging (tofu filling ffs).
You'd better wear a hairy jumper and serve parsnip wine with it to really get in the mood.

You can make pumpkin ravioli really easily by buying wonton wrapers in an asian supermarket and using them instead of the pasta. then you just make the filling and serve it with a sage butter sauce. Easy and delicious.

Fondue is ace.
Good charcuterie and pickles avec plus green salad.
Very light pud.Fruit even?

You could try a nut roast - it's probably a bit of a staple for veggies but still quite nice for all that.

The aubergine thing from nigella, i serve with salad, stock roast potatoes (so you peel them, score them down to the last inch of spud (looks like youve pusched them through an egg slicer then stopped) then put them in a roaster with some boiling water and stock up to where the score starts spray/brush with oil and roast.)
serve also with crisp veggies, the aubergine is quite rich so not much else needed.
