Carrot soup sans coriander??

Lulumama · 26/03/2008 18:08

will it be a big orange bowl of blandness

seem to have rather a lot of carrots, DH hates coriander with a passion, short of us all turning into wabbits, need to do something

have one courgette and a weird looking thing that might be a kohlrabi? it is like a swede that fell out of the ugly tree and hit every branch on the way down...

Do you have an orange you could squeeze into it? Carrot and orange is lovely

Or gee it up with a bit of ginger ?

lol at your kohlrabi falling out of the ugly tree

definitely have orange, not ginger

i will try the kohlrabi, do you think it would be nice in the soup?

it is staring at me, out of the veg box looking forlorn and unwanted

thank you both!

any other herb might work
say parsley

BBBee · 26/03/2008 18:21

just carrot is quite nice I think.

bubblagirl · 26/03/2008 18:24

carrot and corriander my speciality putting potato in helps and just use small amount of dried corriander plenty of pepper and salt

does need just small amount of corriander as it adds to flavour but only small amount if someone doesnt like it but once cooked out you can not really taste it you can then add some orange rind to bowl when serving

BoysAreLikeDogs · 26/03/2008 18:34

Sweat onions in butter and season well with salt and black pepper and oregano or mixed herbs. Add some chilli flakes or chilli powder (not a lot - just to give a bite rather than heat) and then add the carrots, sliced/diced. Cook gently for around 5 minutes then add chicken stock (a cube will do) and a tin of tomatoes.

Cook for about 20 minutes and then puree till creamy.

If you've got cream, a swirl of this would be good, or a dollop of natural yoghurt.

Like all soups it will take more salt than you think it should!

Carrot and ginger - lovely

Carrot on its own is suprisingly nice (sweet) the dds love it!

Kohl rabi also great raw as coleslaw ingredient!

stirlingmum · 26/03/2008 19:00

You could make carrot cake instead with your glut of carrots!

Sazisi · 26/03/2008 19:03

We often have plain old carrot soup - it's fine!

Lulumama · 26/03/2008 19:12
