What's a good vegetarian cookbook?

I'm after a good vegetarian cookbook - reasonably easy and quick meals - can anyone recommend one please?

I have the New Cranks Recipe Book (by Nadine Abensur, lots of sun-dried tomatoes and feta) and the David Canter et al one (wholemeal everything including the lampshades).

Enchanted Broccoli Forest does have some good recipes, but the eponymous one's a bit substandard.

I have a very basic one from the Vegetarian Society which is good and relisble. I have always found Delia's veggie recipe very faffy and very calorific as she seems to think veggies have to have cheese in everything

Would second Rose Elliot as well

Madhur Jafrey's "World Vegetarian" is brilliant - I spend hours propped up in bed reading it and drooling - and the things I've cooked from it have all been good too.

Rose Elliot is good too - especially if you avoid the more 1970s-ish stuff. She has a good recent one called "Vegetarian Supercook" - I got it from the library but aim to buy it now, as it had a fair few easy, contemporary family recipes in it.

The World Food Cafe books (stocked by Oxfam usually, so you can do some good when you buy) are excellent too, although most of these recipes are quite spicy so no good if you like bland!

OK, another couple of votes for Leith's Vegetarian Bible, Great Vegetarian Food by Australian Womens Weekly, and Moosewood Cookbook by Mollie Katzen. I also really love Vegetable Heaven by Catherine Mason. It is beautiful to look at (illustrated by watercolour paintings) and the recipes are unusual but straightforward. A good, cheap and useful one is Good Food:101 Veggie Dishes - about £3.99. I'm hungry now...
