Can I prepare Potatoes on Christmas Eve

I think I have read somewhere that I can prep potatoes as far as boiling them and giving them a shake on Christmas Eve and then roast them on Christmas Day. Has anyone done this? How do you store them overnight??

I've stored boiled potatoes in the fridge in a bowl covered with clingfilm before now and either fried them or mashed them the next day. Not roasted them, but don't see why the principle wouldn't be the same - but I might want to try it out before I did it for Xmas Day!

In the fridge! They actually crisp up rather well if they go into hot fat from cold. OR you can parboil them & roast them until nearly done on a low-ish heat, cool overnight & then finish them in the deep fryer for literally a few minutes...
