Tray bake: not chocolate, apple, coffee, carrot or lemon drizzle

Having friends over for coffee tomorrow. Shopping in the morning so have time to get ingredients.

I'd like some sort of tray bake, but don't want to use chocolate, apple, coffee, carrot or lemon drizzle (combination of guest dislikes or cakes we've had recently - we take it in turns to host)

I want something 'cakey', thinking tray bake as can cut into small squares for those that only want a taste, those who want more (like me!) can have more.

I'd like it to be light and tasty and preferably quick to make.

I know I can Google but often people have their favourites hence asking on here. Thank you .

Victoria sponge is always my first choice. Cutting in half is a faff, so I just spread the jam and butter cream on top. Or you could use whipped cream and fruit on top?
I could murder a bit now.

Orange and cranberry is a lovely combination, not sure why that would be weird

What about coconut OP? Those squares with jam on top and then coconut bits on top?

Parkin or similar, I don’t have a recipe to recommend though. My great grandmother made an amazing sticky ginger cake that I wish I had the recipe for.

Cakesmiths stock loads of coffee shops round where I live and they have a tray bake range.

My favourite one they do is a sticky toffee Biscoff. May be worth looking at their website for flavour ideas. They also do a blueberry bakewell traybake which is lovely.

I keep packets of Wrights ginger cake mix in my larder for emergencies, they look like mini bags of flour. All I have to do is add some oil and cold water. There are delicious pieces of crystallised ginger in the mix. When I make one, people often ask me for the recipe - I do admit it was a mix! They fit in a tray bake tin and are extra special with a thin lemon icing on top.

You can't go wrong with an apple crumble! Easy to make and comforting in the cold. Serve with either custard or cream.
