Tray bake: not chocolate, apple, coffee, carrot or lemon drizzle

Having friends over for coffee tomorrow. Shopping in the morning so have time to get ingredients.

I'd like some sort of tray bake, but don't want to use chocolate, apple, coffee, carrot or lemon drizzle (combination of guest dislikes or cakes we've had recently - we take it in turns to host)

I want something 'cakey', thinking tray bake as can cut into small squares for those that only want a taste, those who want more (like me!) can have more.

I'd like it to be light and tasty and preferably quick to make.

I know I can Google but often people have their favourites hence asking on here. Thank you .

Mary Berry had a book (Fast Cakes) years ago with a basic sponge recipe with variations for a traybake. My favourite one said it was a fruitcake, but basically it was a light sponge traybake with added sultanas and demerara sugar sprinkled over the top part-way through the cooking time. It's delicious. My mum made it when I was younger and I still make it now.

How about blondies? Or an orange cake (vanilla sponge with zested orange added) with an orange whipped cream on top? Or a bread and butter pudding?

This is hands down the most delicious traybake I've ever made. From memory it's quite quick to throw together although it took a little longer to cook than the recipe says. Leave out the almond extract unless you're marzipan fiends - it's really not my thing.

I was coming on to recommend this book- so many good tray bake ideas. Get the book OP, it comes in so handy!

Also take a look at 'coffee cakes' on US food sites. Despite the name they are not coffee flavoured, instead they're cakes to have with coffee. Generally they're one layer tray bakes. Sticky spiced ginger tray bake. It's on the BBC Good Food website.

This and Nigella's Guinness cake are the two cakes (of probably 10 I make) that every single person does that OMG face when they take a mouthful and asks for the recipe.

White choc and raspberry? (I know you said no chocolate but wasn’t sure if you meant all chocolate or just milk)

or- it’s not cake but easy and super quick and delicious- biscoff fudge. Just melt 400g of white choc (cheap cooking choc works) with 200g of biscoff and a can of condensed milk. Do it on a low heat on the Hob with lots of stirring- doesn’t take long. Scoop it onto a tray lined with grease proof paper and if you want to make it look fancy add some meted swirls of white choc and some lotus biscuits crumbs. Stick in fridge overnight and the next day you will have delicious fudge
