Tray bake: not chocolate, apple, coffee, carrot or lemon drizzle

Having friends over for coffee tomorrow. Shopping in the morning so have time to get ingredients.

I'd like some sort of tray bake, but don't want to use chocolate, apple, coffee, carrot or lemon drizzle (combination of guest dislikes or cakes we've had recently - we take it in turns to host)

I want something 'cakey', thinking tray bake as can cut into small squares for those that only want a taste, those who want more (like me!) can have more.

I'd like it to be light and tasty and preferably quick to make.

I know I can Google but often people have their favourites hence asking on here. Thank you .

Mary Berry is your key search term here. I've had to make my own index sheet of all the tray bakes in my Mary Berry books so I can find them quickly.

I've been meaning to try this one - https://achetobake.co.uk/2021/01/31/pecan-and-cinnamon-ripple-squares/

Wouldn't normally recommend a recipe I haven't tried, but I haven't had a bad MB tray bake yet.

Pecan and Cinnamon Ripple Squares

This light and tasty traybake provides a buttery and fluffy sponge. The combination of cinnamon and sugar gives a nice sweet flavour and the pecan topping gives a subtle nutty crunch.

Too late for OP, but I made this last year using frozen raspberries and fresh rhubarb (but could have used tinned or frozen, I would think) and it was really lovely. Beautiful colours. Very simple to make. (I saw no need to put them in little paper cases, as the illustration suggests.) https://www.delish.com/uk/cooking/recipes/a30266263/raspberry-rhubarb-crumb-bars-recipe-ghk0514/

Raspberry-Rhubarb Crumb Bars

These bite-size fruit bars are sweet and tangy, and the perfect size for serving at festive spring gatherings.

Ginger cake is nice and easy to make, just normal Victoria recipe with spoon of ginger in.
