my dh is going away for a few weeks so it will be me and our 2yr old - some food ideas please!

My Dh is going to be working away for a few weeks, so it will just be me and dd at home. Food has become a bit routine at home anyway recently, so I need some new ideas, but will also be suitable for just me and my 2 year old

Hi Elf, Spagetti Bol, sausages and mashed potatoes, fish fingers and oven chips, French Toast,shephards pie, stew, cheese on toast, toast pizzas, garlic bread (usually a fav).

I usually try to make a one pot meal for me and my 5 yr old ds when hubby away. Then the meal can either be frozen or reheated the next day (if you don't mind eating the same thing 2 days in a row).

We tend to have spag bol once a week, DD likes to sit on the kitchen side while I'm chopping and stuff, plus it is fine in the pan until DH gets home for his tea.

Mmmm, haven't had fish fingers for ages!

make a huge pot of beef stew with plenty of carrots and root veg, and freeze in mummy and DD sized servings.
Same with Italian veg soup which freezes really well: carrot,toms, tinned beans (cannellini or haricot), peas, potato, big spoon of pesto, some sliced greens (savoy or kale), lots of cheese when you serve up.
My dd loves bean stew which can include any old veg - carrot, peppers, celery, leek, toms - and I give it as a pasta sauce or with chipolatas, or cheese on toast - whatever you feel like. Again, freezes so well!

Pizzas made with split english muffins topped with tomato paste, ham, cheese, whatever. DC can make meal for you!
