Need a (specific) lamb recipe for Easter Sunday dinner. Can anyone help?

Possibly a bit off the wall, but this is MN, so worth a try!

I had a meal at my uncle's a few years ago of an absolutely delicious lamb stew, made with red pesto.

Now, he's out of the country just now or I'd just ask him for the recipe. Anyone cooked anything vaguely similar?

just did a google search on lamb and "red pesto"; got 18,100 results! Lamb, stew, and "red pesto" gives 1200 results. Perhaps try doing a search and scroll through til you find something which sounds like the dish you had (then come back here and post it - sounds wonderful!)

Slow roast lamb chunks is georgeous, I use the one that is in long strip, marinate over night in lemon with little sea salt grated over top and oregano. put in over at 150 for about 3 hours. Pop some potato under it to stop it sitting in fat. Its greek style and one of the only ways that I would eat lamb as I find it too greasy otherwise!

Ohhh, now I think I might try and make something similar for Easter Sunday night dinner. We have four friends coming to stay for the weekend and a good stew is always a winner! I know Jamie Oliver has a really good 'melt in your mouth beef stew' in his 'Cook' book, but the lamb and red pesto sounds de-licious!

Go to BBC Food and enter lamb and pesto in the ingredients search - you get 3 results. Any good?

there is a lamb with sun-dried tomato pesto in my slow cooker cook book and let me say it is really really tasty!!

You need:

8 Lamb loin steaks (so boneless)
400g button Mushrooms
4 chopped Garlic cloves
800g Chopped tomatoes
4 tbsp tomato puree
4 tbsp Sun-dried tomato pesto
250ml red Wine
100ml sweet Sherry
4 Beef stock cubes crumbled
1 tbsp rosemary

Heat oil in pan - brown the lamb and set aside
Add mushrooms and garlic to pan - cook for 3 mins. Add rest of ingredients to pan and bring to boil.

Put all ingredients with lamb into slow cooker/casserole dish and cook for 8 hours (slow cooker) and on low for as long as possible if in the oven.

Believe me it is delicious and so easy to do and everyone comments they have had nothing like it!!
