I used to live in Holland, where they like to think that chicory is a national dish. They cut a 'V' into the stem end to let the bitter juices out, but not so deep that the leaves fall off. Then they boil them for I can't remember how long. Probably 10 mins. Then they wrap them in sliced ham and drape cheese on the top, and stick them in the oven (or under the grill).

I like to put it in a salad with a mustardy vinaigrette.

Also quite good sliced thickly and sauteed with chopped garlic and anchovy.

I don't have the original recipe anymore, but this is damn close to it - glazed chicory. A bit lish.
