specifically looking for easy recipes (aren't we all!) for fish cakes and fish pie. - I make fish pie quite often, but make a cheesy sauce with it, and I'm sure it's very calorific so if anybody's got a lower fat version, would be very grateful!

any other fishy recipes happily received too, TIA.

Well according to Delia you need pre cooked salmon, frozen discs of mashed potato, cornichons, and quails eggs. Hopefully someone will be along with something more sensible in a minute...

I do this one from Good Food all the time. Recipe calls for smoked salmon but really any smoked fish will do I use whatever's on offer. It's a lot easier than fish pie as it uses cream instead of white sauce not exactly diet food but only 328 cals a serving according to the book.

Smoked salmon and celeriac bake

juice of 1 lemon
1 small celeriac (about 650g)
2 med baking potatoes
2 x 125g packs sliced smoked salmon
small handful dill, chopped
1 onion, finely sliced
284ml carton double cream

Preheat oven to 200C/Gas 6/180 fan. Quarter celeriac and slice into £1 coin thick slices. Toss with lemon juice. Peel and thinly slice the potatoes and add to celeriac.

Layer celeriac, potatoes and salmon in a large oven proof dish, sprinkling onion, dill, cream and black pepper over each layer. You should have 3 layers of veg and 2 of fish. Finish with remaining cream.

Cover dish with foil, place on a baking tray and bake for 45 minutes. Uncover and bake for 30-40 minutes more, until veg are tender and top is golden. Cool slightly before serving. (This last is important-- it comes out molten!)

Supposed to serve six, by the way. In case you thought the 300 cals was for half the dish. Which is what dh and I each get through.

This is really easy

ingredients
cod
proscuitto
green beans
lemon
garlic
olive oil
potatoes if you want

put green beans flat in a big tray. wrap cod in proscuitto, put on top of beans, scatter cut lemons and garlic, drizzle with oil, cool for 20 mins. If you want to add potatoes, leave skins on, cut into cubes, parboil for a little and then add them too. Season, cook. serve in tray.

it meant COOK for 20 minutes, not cool, no cooling required! It's v nice, we have it a lot as it takes about 2 minutes to make
