not nec quick but must be cheap, filling & hopefully have veggies in it. (pref under £3.00 per meal, but double if i'm splitting it iycwim)

will be doing extra and freezing some so stuff to freeze also fab.

any thoughts on a tom sauce as well?

am currently using about 4 meals, and althou our food bill is low £30 due to funds - we also eat out at least twice a week at my parents house. - well no point doing a sunday roast for an adult and a toddler is there? lol.

so any thoughts?

Moroccan veg with couscous:

Cut up one onion, one sweet potato, one potato, one courgette, 4 carrots and 2 garlic cloves and simmer in a small amount of water until cooked. Add 1 tin of tomatoes, 1 tsp cinnamon, 1 tspn cumin, 1 tspn paprika, small tin or chickpeas and a handful of raisins. Simmer for 15 minutes. Add a handful of chopped coriander. Serve with couscous (half cup of couscous, add 1 cup boiling water, leave for 10 minutes till all the water is absorbed).

This is yummy and a staple for me and DS, who loves it. I add chilli or harissa paste to mine too.

This recipe will definately make enough for you to freeze half for another day.
