My dad grew up mostly on beans, Tutter.

He once heard a television reporter corresponding from somewhere in Mexico. This reporter expressed shock that children were living on beans, rice, corn tortillas and goat's cheese.

Dad turned his head to the side and said, 'Well, what the hell is wrong with that?'

sure.

take the corn tortilla and bake it or fry it till crisp. top with beans. melt some nasty goat's cheese and put it on top of the beans. eat it with a side of rice. cool, it's tea time at Papa's mother's house.

OK, tip most of the water away down the sink then leave the jars on their sides on a baking tray? .....but how do you manage without a draining board? I remember s student hous that didn't have one, it was a real pain!

we've got a v fancy dishwasher, it's two drawers, so we let big stuff drain in the empty drawer.

mmmm sweet beautiful beans

have lived on rice and beans and tortillas in mexico when we were less than skint (with the odd guacamole here and there!)

Now I make vast but fairly non-authentic bean chillis (sin carne in this house).

big hearty italian bean soups with rosemary a fave in winter.

My chilli i use loads of cumin, coriander, some of that lovely smoked Spanish paprika - see what i mean about non authentic! And usually dried chilli.

Grind up those spices, add to sweated onions, peppers and garlic, cook off for a minute or two. Deglaze with some wine or other liquid, then add a tin of tomatoes, plenty of tomato puree.

I usually add three types of bean but normally one is a kidney, maybe a borlotti, haricot... anything.

Usually add chopped mushrooms, sweetcorn. Let it all simmer slowly for a good while. Add anything that you might add to encourage flavour - seasoning and your worcester sauces etc.

Loads of coriander right at the end.

Sometimes have with rice, then maybe in tortillas the next day with some avocado and lime salsa.

oh and soups I tart around a fair bit, but am a locatelli fan and he has some nice recipes...
