Vegetable Soup Help needed pretty please xx

ok, the only soup I have ever made is leek and potato, but hubby has decided he would like to try some vegetable soup but I haven't a clue which veg would go nice together and am hoping that someone would point me in the right direction. The veg I have in stock are:
White cabbage
Potatoes
Onion
Swede
Leek
Parnsip
Carrots
Tenderheart cabbage

also to make the stock, would in be best to use either a vegetable stock cube or chicken stock cube, sorry for the dunce questions xx

Ime most veg goes well in a veg soup, certainly the ones you mentioned. Any stock cube is fine, lots of people on here will advise you how to make proper stock if you wanted to. I will one day... . I use low salt stock cubes as I feed the soup to the dcs as well.

I have a fab recipe for parsnip soup and at the end after pureeing you stir in some natural yogurt. It is a spicy soup - it has a little cumin and cayenne pepper (dried) in it. It is a basic recipe, white onion and parsnip plus stock and the spices.

Personally if I am adding things like cabbage I put them in nearer the end so they don't go soggy. All the lovely root veggies take longer of course. Sometimes I add noodles near the end, and sometimes little bits of chicken at the beginning (no need to cook it first if you are simmering the veg for long enough). Make loads and freeze it or keep in fridge for a couple of days. I love it as a snack/lunch as leftovers.

Once you get the hang of different ones you will make them up as you go along (well I do anyway).

Parsnip & Carrot is nice. Cut veg into cubes, also an onion, fry in olive oil or butter and add the water plus a veg stock cube, loads of black pepper & a bit of salt. Yum. Simmer for 30 mins. Blend or mash the softened veg. If you have any herbs add them as well. Parsley is good.

If I was doing a broth type soup I would use potato, onion, parsnip, carrot and maybe swede and leek. All diced quite small and cooked in stock until soft but not pureed at the end. Otherwise I would agree with a spicy parsnip one (onion and parsnip and a small potato to thicken with some curry powder) or carrot and lentil is a nice thick hearty one. Personally I probably wouldn't use the cabbage but any combination of the other veg would be nice.

Re stock cube, you could try veg the first time and chicken next time you make one and see which you like best. Or if you want to make your own simmer an onion, a carrot, celery if you have any, some peppercorns and a bouquet garni (herbs) in some water, then strain out the bits and add your soup veg.
