I am doing salmon in the oven for the kids and I usually dot it with butter first. While it is always very nice when I do that I am wondering whether I actually need to put anything on the salmon at all.

I sometimes don't put anything on the salmon, salmon is an oily fish so if you cook it gently it doesn't need any extra fat. Or steam it like Lapin says, also yummy. try a splash of soy sauce and some sweet chilli sauce on it before baking, it is really good.

desperate to say poach it .. but oven is nice too .. I never put butter on it though

Tis in oven with a splash of water and wrapped in foil.

Doing salmon for hubby and I later so might try the soy sauce for us. Does it still need a splash of water?

olive oil, herbs if you have eg fennel tops poss a cherry tomato or 2, slice of lemon. wrap in foil. bam.
