Sweet Tomato and Pepper soup - something missing, help!

Oh wise mumsnetters you help me recover my beef stew last week.

I am now cooking a sweet tomato an pepper soup, it is near to the end of its cooking time but feel there is something missing.

I fear it will not be enough tomato for the children. Do i add some passata or any other ideas?

danger of adding passata is that it will just taste of passata. Do you have any sundried tomatoes or paste. Fry them/it off with some olive oil and garlic and then add to the soup.

oh, i know what you mean. Dont have any sun dried any other ideas

steep some garlic in olive oil and add the oil.

balsamic vinegar (but only put a little bit at a time)

sweet paprika

or just try add some good olive oil and seasoning

did you roast the peppers? it'll probably be that. smoked paprika might restore some of the flavour.

the soup turned out ok in the end, i just added a tiny bit of tom puree. witchandchips good job you said i would have added the lot.

aitch, yes the peppers were roasted first. so what would you have done with the peppers?
