hoisin sauce not easily replacable

wine - use sherry / port / marsala / wine

Change the menu a bit? Try sweet and sour, plum sauce, bbq, salt and pepper
(not all of them at once!)

hoisin is thick and sticky though, more like (er) jam

have you plum sauce? that'd do

no plum sauce here, thanks for trying maybe will mix jam, soy sauce , honey and cinese spice that will do?

probably

try it without the jam and see how sticky it is - it might coat the ribs okay without it

(and if I did use jam I'd use apricot ratehr than strawberry or anything)
