Dairy free rice pudding?

I tried making it with rice milk instead of normal milk, but it was sticky and too sweet. Any ideas?

coconut milk?

Gorgeous with coconut milk, I make it that way all the time now and we don't have any dairy intolerance in our family - just prefer it.
