I want to make chicken breast with bacon rolled around it and wondered if I could put Pepper in the middle - does the pepper need to be cooked ?

do you mean like a green or read pepper?

if so, yes
or grilled at the very least which means grilled till the skin blackens and blisters, put it in a bowl and cover with clingfilm and leave for 15 minutes, then peel off the skin, cut in half, take out the stalk and seeds, slice into strips and toss in olive oil and salt and pepper and then put it inside your chicken

there just isn't enough fat or juice in a chicken breast to make raw pepper digestible even when the chicken breast is cooked right through

actually I've just come from a job where we served a very similar dish and we put avocado slices inside the chicken breasts, you slice a breast in to three or four to serve and the colour combination looks great

Thanks Suzy - will quickly cook it up now - Thanks Also did you panfry the chicken before cooking in the oven or just place in the oven - lots of recipes with different ideas

nah, it just goes in the oven on high for about 10 minutes and then turn it down to 180 degrees for another 15 and then cover with foil for a further 10.

we serve it with steamed new potatoes sprinkled with parsley and melted butter and some good jus or perhaps you could use some mango chutney mixed with yogurt as a sauce
