Just chuck in the rice, butter and a chopped onion, then stir until your arms ache add stock as you go until it is right.

I never follow recipes with risotto, it's far too hit and miss.

fry bacon and mushrooms

add splash of white wine

stir in rice

ad stock ladle by ladle for 20-25 mins

stick parmesan on

courgettes if you must but I don't like em
