How do you freeze fresh vegetables

I want to get organised for Christmas dinner and would like to prepare carrots and brussels to freeze. Do you need to blanche them first in boiling water, and if so, how do you actually do that? I remember reading something about it but am not skilled in the kitchen at all

There's a very useful little Collins Gem book called Food for Freezing which tells you everything about how to freeze absolutely anything. It's my freezer bible!

to blanche vegies, bring to boil and leave for 1 minute, then drain, leave to cool and freze.

I wouldn't freeze sprouts ahead of time, they'll go soggy.
You can prepare them a day or two in advance and keep in the fridge as it's the prep that takes time not the cooking.

If it is OK to do that then that is fine. Am night shift Xmas night so want to have as easy a day as possible.

You only need to blanch for longer term storage. For a week or two they'll be fine without.

Don't forget to freeze them on a tray and then when they've frozen you can put them in a bag...

So what do you do with them with you want to use them? Just cook as you would shop bought frozen veg? I buy everything ready made me! lazy bugger

I like carrots - frozen or fresh - cooked in the microwave with knobs of butter dotted over (or Flora if you want to do healthy). Sprouts, just add to a little bit of boiling water in saucepan - though you can braise them in marg/butter in saucepan.

I must dispute the claim that flora is healthy! Butter's much better for you
