im just roasting som duck legs, what can i do with the left over duck fat?

ive got one of those coconut shells that i brought from the gardening center can i use that, i thought perhaps put the left overs in the coconut shell with bits of bread and nuts, although i only seem to have pine nuts

you can use dried fruit for the birds as well

I use it in pasta. Fry some garlic in the fat (use loads of fat, pasta must be dripping in it). Put in some asparagus, and i use duck, then mix in the cooked penne. Salt on top, absolutely love it.

freeze it then use it for roasties when you get chance. Yummy!!

Agree use it for roast pots, or do confit of duck with it. (Do rember to strain it through a seive first to remove any debris before you put it in the fridge, so it keeps.

Definitely roast potatoes. It's also good for cooking greens in (with garlic similar to BrownSuga's pasta method above). Nigel Slater mentions greens in duck fat in his 30 min cookbook and I think in his Kitchen Diaries too.
