freezer meal suggestions?

has anyone got any brilliant ideas for a meal I can make and give to someone who's just out of hospital, for them to stick in the freezer and use on a night when they don't feel up to cooking a meal from scratch? Did a cottage pie for them last time, so something different would be great, thanks

Do they like fish? Fish is good for someone who has been ill, a fish pie with prawns and smoked haddock add some salmon and a cheese sauce topped with mash potato.

Chilli con carne
Any kind of substantial soup (minestrone, chunky veg, butternut squash etc)

My friend made butternut squash soup for me last week - it was delicious. She halved 2 squashes & sprinkled them with cinnamon, roasted for 30 mins on gas mark 5, then fried a chopped onion and few cloves of garlic, added about a litre of veg stock, scooped out all the squash and blended it all together. Rally tasty, really good for you, very easy to eat of recuperating and can be made more filling with nice bread/cheese etc.

If you were to freeze that in bags for individual portions it ould be used for lunches or suppers then?

I use about a pound of fish - salmon or mixed white fish/smoked haddock (cos we like smoked fish) some prawns. I get a mixture to make it more interesting.

Put the fish (appart from the prawns, I get already cooked prawns) into a shallow dish laid out flat, put some nobs of butter on the fish and pour over half a pint of milk. Cook in the oven for 20 mins gas mark 4.

Hard boil 2 eggs, cool inder running cold water and shell - set aside for later.

When the fish is cooked take out of the oven and drain the milk into a measuring jug. Flake the fish up in the shallow dish and add the prawns and chop up the eggs and add that aswell. Sprinkle over some fresh chopped parsley or dried parsley.

Put some potatos on to boil.

Now using the milk set aside make up a white sauce, then either add some grated cheese to the sauce or put the grated cheese on the fish mixture. Pour the white/cheese sauce over the fish and then mash the potato and add to the top of the pie.

If you have an iceing bag you can pipe the mash ontop - make the mash with a bit more milk and make extra mash as it doesn't seem to go as far when pipped - but crisp up lovely in the oven yummy

Cook the pie in a ready heated oven at gas mark 4 and cook for 45 mins

Souds nice ivykaty - jamie oliver adds a bit of mustard to his white sauce - I think mustard tastes like some sort of chemical weapon usually but even I have to concede that it makes a fish pie even more scoffable.

I love stew and dumplings or just stew on its own - I do sometimes layer the bottom of the casserole dish with sliced potato, which means it is a one pot meal and can be served up without having to cook anything else to go with it. This might be a good option for your friend if they are not well.
