ox-tail - how to cook please!

seen some ox-tail in local deli, would like to give it a try, can i slow cook it? in what sort of sauce/marinade?

I did some last week, for the first time. I browned it and casseroled it the same as any tough cut of meat, cooked it long and slow in the oven with onions, carrots and stock. Then I left it to mature in the fridge overnight and the next day I added some vegetables, lentils, potatoes and a can of tomatoes and some fresh chopped parsley and cooked it for another two hours.

It was very nice but if I did it again I would trim the fat off before cooking. It was very fatty.

Oxtail is a very popular dish in the Caribbean, too, particularly Jamaica. I've never cooked it, but there are loads of recipes if you google it.

I cook it with stock and onions, Let it get cold and take off the fat (I also have to take the meat of the bones as DH doesn't like eating meat on the bone). Then the next day reheat with some more onions, carrots and some pearl barley.
