i don't bother browning meat any more, just fry the onion a little then chuck it all in, bring to boil then into oven for a few hours.

if you don;t brown the meat does it look as nice?

two hours cooking would be ok, i could get it in the oven for 4.30

If you don't brown the meat, the gravy will be paler and runnier. The casserole will be less fatty as well, which some people would consider affects the taste. But I think it's still jsut as tasty. When I'm in a hurry I don't bother browning, just sprinkle a little flour into the whole dish if I want thick gravy rather than soup.

But to get the meltingly soft meat you need the long slow cooking. The only way to get around this (if you do't have a pressure cooker) is to cook it one day and reheat to serve on another day. I think a combi microwave would cut down the cooking time, but not by much - 1.5h instead of 2, perhaps.

Fry off meat, then transfer to casserole dish

Fry onions or whatever veg you are going to use...leeks?

Add meat back to pan, sprinkle in some curry powder and ground ginger, and some flour. Blend in hot beef stock.

Bring to boil, add Worcester sauce. Put in casserole dish, cover and cook for about 1 3/4 hrs.

REALLY nice with a tbs or so of horseradish stirred in at the end. And add some carrots about 1/2 hr before end of cooking time.
