Reading the meal planning thread make me think i could do with some help too

I am sick of eating the same old rubbish but i am vegetarian so am finding it very difficult.
I am not vegetarian under principle btw just have phobias of certain foods.
I cannot eat eggs ,only penne pasta,etc.

I eat tons of baked potatoes and steamed veg,potatoes ,gravy etc,baked beans,cheese,rice,quorn curry's,homemade vegetable pizzas,quorn bolognese,quorn chilli,soup.

What else can i cook ?

veg lasagne

roasted veg with tuna and balsamic vinegar drizzled

lentils are great - lentil lasagne or lentil dahl

aubergine, cheese and potato bake

I don't eat any fish either.

Sounds good i do make veg lasagne sometimes.

Tell me about lentils please, how do i prepare and cook them?

Do you eat pesto?

Pasta pesto and cheese is tops

You can add sweetcorn of you like and put chees on top - bit difficult toput ot on your bottom

pesto is made from olive oil, pine nuts, parmesan cheese and then often basil but other things can be put in instead - sun dried tomato,

You can either make it yourself or buy it in a jar in the pasta sauce section at the supermarket. Or in a deli you can get fresh.

I buy the jar and then add two teaspoons to cooked pasta for one - I also add a dessert spoon of creme friach and then cheese. I cook the pasta to the packet instructions and 4 mins before cooked add a handful of froozen sweetcorn.

If I have cherry tommys I chopp these into four and add a handful aswell.

ok, Lentil curry - bloody lovely and I eat anything (not even vegetarian). This is really tasty, not violently hot - my DCs who are good eaters but not madly adventurous, love this.

180g Red lentils, rinsed in cold water
2 onions
2 cloves garlic
2 inch hunk of ginger
half tsp chilli powder
1 tsp ground cumin
1 tsp groun coriander
1 tsp paprika
750ml veg stock
1 tin 440g chopped toms
100ml coconut milk
oil for frying

Blitz onion, garlic and ginger in food processor, then fry in a pan in oil for 3 mins

Add spices and fry for another min

Add lentils, toms and stock, bring to boil and simmer for 20-30mins until lentils are cooked.

Stir in coconut milk and serve with rice or naan.

dalh is really easy and cheap, we have dalh with pitta vread and bombay potato.

No, you don't need to soak, tis an urban myth. You can do up to twice the amount of spices if you like a bit of fire.

You don't mentio the quorn sausages - those are quite nice if fried. Or you could 'undo' the sausages (split the 'meat' out i mean) and wrap the meat in cooked cabbage leaves. Fry the little parcels in a saucepan and then add a bit of stock. Simmer until 'meat' is cooked (about 15-20 mins) adn serve with lots of mash!
